What has worked for you in your mental health journey battling depression, and what advice do you give? We talk about mental health here all the time. You've been very vocal in helping veterans, obviously. First, and secondly, you've done so much for destigmatizing mental health. You know I'm so- first of all, thank you for your service. We will call you whatever you tell us to call you, Chef. And so, I took it kind of personal and one day I actually told one of the bosses, call me Chef Tim. And when I became a chef, they still didn't want to call me chef. Right, I was a big guy, and I did a lot of things, and I was the hardest worker. And I noticed everybody was calling everybody chefs except for myself. I love cooking, and when I came into the chef world, culinary world, I didn't even know what it meant. It's because when I became a chef, I wasn't supposed to become a chef. And explain to me the title? Why did you go with that Call Me Chef Dammit? What do you eat? What's a cheat day for you? Saturday and Sunday, I take off, and I just eat. And those arms, I mean, we had to pull out extra chairs for the arms. It comes out today, and here he is, all three of him. A Veteran's Journey from the Rural South to the White House. So much to Chef Rush's story, he is recounting it all in his new memoir Call Me Chef Dammit. This former Master Sergeant spent 23 years in the Army, serving in Korea, Afghanistan, and Iraq and has built a reputation and a physique that has made him a staple in mainstream media. But it's not just his cuisine that grabs your attention. Rush served as a White House chef through the Clinton, Bush, Obama, and Trump administrations and made quite a name for himself, serving up award-winning meals for some of DC's elite. But during their presidencies, it was Andre Rush who quite literally might have been the most powerful guy in the White House. NARRATOR: Bill Clinton, George W Bush, Barack Obama, Donald Trump. The answer is going to surprise you, and it's all going to make sense. Now, you think of who's the most powerful person in the White House. Toss the wings in about a cup of the sauce, or serve the sauce on the side for dipping.- Now, to our nation's capital. If needed, whisk the habanero–honey sauce again to make sure everything is well combined. (Make sure the temperature of the oil returns to 350☏ before frying a new batch, or the wings will be greasy.) Transfer the fried wings to a paper towel–lined plate or baking sheet. Working in batches, fry the wings until golden brown, about 4 to 5 minutes. Shake off any excess batter, then coat in seasoned flour. While the oil is heating up, prepare the wings for frying: dip one wing in tempura batter. Set aside.Īdd about 6 inches of frying oil to a deep pot. To make the seasoned flour, whisk together all of the ingredients in a large bowl. Add the water and ice mix well to smooth out any lumps. To make the tempura batter, whisk together the flour, cornstarch, baking powder, and salt in a large bowl. Discard the vinegar or save for another use. Taste and add a little more vinegar if desired. Whisk in the honey and a tablespoon of the habanero vinegar. Remove from the heat and scrape into a medium bowl. Cook until the butter turns golden brown and develops a nutty aroma, about 8 minutes. Heat a large saucepan over medium heat and add the butter. Strain through a sieve and discard the solids. To make the habanero–honey sauce, combine the lime juice, vinegar, habanero peppers, and salt in a blender and purée until smooth.
